How do I delist a product that is no longer sold while keeping the historical data?

Use Delist, not Delete. In Product Management, select the products you want to stop selling and click Batch Delist, then confirm. After delisting, the status changes to "Unlisted." Product data, price tiers, and attachments are all retained, but the product will no longer appear in catalogs viewed by buyers and visitors (catalogs show only listed products). 1. After delisting, open each catalog containing these products in Catalog Layout and click Upload Changes once so buyers and visitors see the update. 2. If you clicked by mistake, click Undo in the completion notification to revert to the original status. 3. To resume selling later, select the products and click Batch List. Then go to the catalog again and click Upload Changes. 4. In the filter list, select "Unlisted" in the Status column to find all delisted products. Delete cannot be undone. Avoid using delete for delisted products. There is currently no "Archive" function. Products marked as "Archived" in the list are existing data that cannot be edited. Select them and click Batch List or Batch Delist to remove the archive status (this step cannot be undone).
