Order data is scattered across Excel, Email, and LINE. How do we integrate them, and where do we start?

The root cause of scattering is that each tool operates independently. Integration starts by giving documents a single home. I recommend first centralizing quotations and POs in one place, keeping a version record each time you send them. When you need to confirm what the other party changed, you can directly compare the two versions in a diff view instead of searching through email for old attachments. After achieving this, try to tie discussions and negotiations to the corresponding documents rather than spreading them across LINE groups. You don't need to replace all tools at once—start with the line that has the highest error rate and most confusing communication, and once you see results, gradually move other processes into the system. When choosing tools, prioritize compatibility with your existing workflow. Forcing employees to adapt to system logic will only create resistance.
